Black Bean Salad with Honey Peanut Dressing
A fresh mixed green salad with cherry tomatoes, mandarin oranges, black beans, chopped red onion and a zesty-umami dressing featuring Jif® Natural Creamy Peanut Butter Sauce and Pure Honey. Finished with crunchy lime tortilla strips and fresh cilantro.

For the Honey Peanut Dressing, yields 1 quart
- 1 1/3 cups Jif Natural Peanut Butter Sauce
- 3/4 cup Pure Honey
- 3 tablespoons sesame oil
- 1 1/3 cup grapeseed oil
- 3 tablespoons rice wine vinegar
- 1/4 cup reduced sodium soy sauce
- 3 limes, zested and juiced
Black Bean Salad
- 1 (15 oz.) can black beans, rinsed and drained
- 1 pint grape or cherry tomatoes, halved
- 1 (11 oz.) can mandarin oranges, drained
- 1 (12 oz.) bag salad mix with iceberg, romaine, carrots and radishes
- Prepared chili lime tortilla strips
- 1/3 cup chopped red onion
- 2 tablespoons chopped cilantro
Directions
- Combine all dressing ingredients in a mixing bowl and whisk until uniform.
- Store under refrigeration up to 7 days.
- Toss black beans, tomatoes and oranges together in small bowl. Divide bag of lettuce evenly on 4 salads plates. Divide bean mixture evenly over lettuce. Sprinkle salads with tortilla strips, red onion and cilantro. Drizzle with Honey Peanut Dressing. Serve immediately.
