Peanut Butter Cauliflower Bites
An on-trend, health-conscious appetizer (or side): roasted cauliflower coated with a Mediterranean-inspired peanut butter sauce.

Roasted Cauliflower:
- 4 cauliflower heads, large
- 2 cups water
- 1/4 cup olive oil
- 1 tablespoon kosher salt
- 4 tablespoons za'atar seasoning
PB Dressing:
- 4 ounces (4 pumps) Jif® Natural Peanut Butter Sauce
- 1/4 cup water
- 1 tablespoon extra-virgin olive oil
- 1 lemon, for juice & zest
- 2 garlic cloves, roughly chopped
- 1 cup parsley, fresh, chopped, lightly packed
- Pinch salt & pepper
Directions
- Pre-heat oven to 450°F
- In a medium/large pan/Dutch oven, place water and bring to a boil.
- Remove cauliflower stem, cut into bite size pieces and place in boiling pot of water for steaming.
- Cook for 5 minutes.
- Strain and pat dry.
- Transfer cauliflower bites to baking sheet and drizzle with olive oil, salt and za’atar seasoning.
- Roast in the oven for 15 minutes.
- To make the peanut butter dressing, place all remaining ingredients in a blender and puree until fully combined.
- Pull cauliflower bites from oven and drizzle with dressing.
