Peanut Butter Cauliflower Bites

An on-trend, health-conscious appetizer (or side): roasted cauliflower coated with a Mediterranean-inspired peanut butter sauce.

Servings: 4, each serving feeds 4-5 people

Ingredients

Roasted Cauliflower:

  • 4 cauliflower heads, large
  • 2 cups water
  • 1/4 cup olive oil
  • 1 tablespoon kosher salt
  • 4 tablespoons za'atar seasoning

PB Dressing:

  • 4 ounces (4 pumps) Jif® Natural Peanut Butter Sauce
  • 1/4 cup water
  • 1 tablespoon extra-virgin olive oil
  • 1 lemon, for juice & zest
  • 2 garlic cloves, roughly chopped
  • 1 cup parsley, fresh, chopped, lightly packed
  • Pinch salt & pepper

Directions

  1. Pre-heat oven to 450°F 
  2. In a medium/large pan/Dutch oven, place water and bring to a boil.
  3. Remove cauliflower stem, cut into bite size pieces and place in boiling pot of water for steaming. 
  4. Cook for 5 minutes. 
  5. Strain and pat dry. 
  6. Transfer cauliflower bites to baking sheet and drizzle with olive oil, salt and za’atar seasoning. 
  7. Roast in the oven for 15 minutes.
  8. To make the peanut butter dressing, place all remaining ingredients in a blender and puree until fully combined.
  9. Pull cauliflower bites from oven and drizzle with dressing.
